Orange ice cream:
3 egg yolks
100 gr brown sugar
1 sachet vanilla
sugar
20 cl whole milk
15 cl orange juice
dash of lemon juice
10 cl Grand Marnier
full cream
Halve the oranges, empty them and put them in
the freezer. Cut off the hats from the rest of the
oranges, one for each fruit to be finished.
Freeze the hats as well.
Make a sugar syrup. Then make a mixture with
the ratio of 45 cl orange syrup, 25 cl freshly
squeezed orange juice, the juice of ½ lemon
and an almost stiffly beaten egg white.
Pour the preparation into the ice cream maker
and set it to sorbet mode.
Fill the frozen oranges with the sorbet, put a
cap on them and let them stiffen in the freezer.
Variation: frozen oranges filled with orange ice
cream.
Make the ice cream: beat the egg yolks with
the sugars until white. While stirring, add the
milk, mixed with orange juice, lemon juice and
liqueur. Add the zest of an unsprayed orange.
Whip the cream until almost stiff.
Mix both preparations and pour the substance
into the ice cream maker.
Fill the frozen fruits with ice cream and put
back in the freezer until use. Finish with a
dollop of whipped cream.
