De-stone the peaches and cut them into
pieces.
Poach the tuna in fish stock and leave to cool.
Crumble the tuna and mix with mayonnaise,
stewed chopped red onion and chopped
chives.
Place the peach pieces on a plate, with a
quenelle of the prepared tuna on top. Finish
off with sliced tomato and mixed salad.
Sprinkle with some freshly chopped chives.
