Chop the beef coarsely. Make a sauce of ketchup, mustard,
mayonnaise and Worcestershire sauce. Mix this with the
freshly chopped meat. Season with pepper, salt and mild
paprika.
Spoon the prepared minced meat into oiled glass jars and pour
them onto the plates. Make a hollow in the top of the tower
with a teaspoon and spoon an egg yolk into it.
Garnish the plate with lettuce, chopped shallot, capers,
gherkins and pearl onions. As an extra option, you can add
slices of cucumber and cherry tomato.
Serve with fresh Belgian fries.
