Make the ice cream. Beat the egg yolks with the sugar
and vanilla sugar until light and foamy. Stir in the cold
milk. Whip the cream until almost stiff. Add the whipped
cream with the other ingredients for the ice cream.
Mix well, pour the mixture into the ice cream maker and
activate the appropriate program.
Make the chocolate sauce. Melt the chocolate in a
bain marie with a few spoons of strong coffee and a
dash of cream. Stir until smooth.

100g brown sugar
10g vanilla sugar
25 cl full cream milk
20 cl full cream
Whip the cream with vanilla sugar. Pour into a piping bag.
Spoon 2 to 3 scoops of ice cream in an ice cup, pour chocolate
sauce, finish with lots of whipped cream and garnish with
chocolate shavings or cacao powder. (Delicious!)
