First the dressing: mix Greek yogurt with a spoonful of
mustard and a spoon of mayonnaise. Add a dash of white
balsamic vinegar and a dash of olive oil. Mix to a
homogeneous mass.
Mix pure minced beef with a dash of olive oil and pepper from
the grinder and a little salt. Chop gherkins and a shallot as
finely as possible. Finely chop capers. Here I used capers in
salt. Rinse them well and do not overdo the rest with salt, even
in the minced beef. Chop curled parsley.
Assembling the dish: Take a slice of toast and spread it with
butter. Put the meat on top and then the rest of the ingredients,
according to individual taste. Finish off with the dressing.
