Basic preparation: cut the onion, celery and garlic into thin
pieces and simmer them in butter. Add the mussel spices and
a small amount of water. Bring to the boil (fire at the highest
setting). Add the cleaned mussels in one go and cover. Let boil
for a few minutes until steam comes from under the lid. Shake
the pot halfway moment. Check whether the mussels have
opened.

The basic preparation, but the water replaced by white wine.
Serve with Belgian fries and a mussel sauce. You can make
that by adding a scoop of mayonnaise with some mustard and
vinegar.
