Make a raspberry compote: Cook the raspberries with a little
water and a few spoons of sugar. Reduce to a sauce
consistency. Leave to cool.
On an appetiser plate: a few thin slices of smoked duck
breast fillet, a spoonful of compote with a few fresh
raspberries on top. Finish with some soft pepper balls,
balsamic pearls and chopped mint.
