Cut avocado into fine cubes. Mix with lemon, chopped shallot,
roasted seeds, salt and pepper and a spoonful of yoghurt.
Puree with a hand mixer or in a blender.
Mix a mashed boiled egg with crab meat and chopped chives.
Season with some pepper, salt and cayenne pepper.
In the glass: a scoop of avocado cream topped with a scoop
of crab mixture. Finish with a few nice pieces from the crab
claws and chives. You can, as here, add another crab claw
and some lemon to the snack. Some toasted toast is also
welcome.
