Brussels sprouts

Put cleaned sprouts, chopped onion, a few cloves of garlic in a
soup kettle. Top up the pot with chicken stock. You can also
just put everything in the soup machine. Season to taste with
nutmeg, pepper and salt. Keep a few leaves of the Brussels
sprouts separate. Leave to cook for 30 minutes.
Fry the bacon. Cut a slice of bread into small croutons and fry
in some olive oil.
In the soup plate: a mirror of soup topped with the bacon,
croutons and finished off with some sprout leaves.
A festive variant: spoon a mirror of soup into the plate. Spray
a spiral of semi-solid cream on top with a pipette. In the middle
of the plate, sprinkle with oven-dried and crumbled bacon.
