Fry the bacon strips until crispy, together with
the leek and shallots cut into brunoise. Peel the
cucumber, remove the seeds and cut into
cubes. Mingle the cucumber cubes with
yoghurt, season with shredded fresh dill,
pepper and salt.
Cook the mussels in a little water with the
mussel spices. Take them out of the shell and
then coat them with the flour. Briefly fry them in
hot butter with crushed garlic. Mix the mussels
with the drained and warmed bacon and
vegetables.

Make a fresh salad of iceberg lettuce, sliced
shallots and oak leaf lettuce. Prepare Belgian
fries.
On the plate: the mussels with the fresh salad,
fries, a cucumber mayonnaise and another
with the cucumber yoghurt. Finish with
chopped parsley.
