Although this is one of the simplest dishes,
without much input from the hobby cook
(unless you smoke the salmon yourself), it has
an incredibly festive appearance and actually
asks, in a festive menu, to be accompanied by
a glass of champagne.
The presentation can of course be refined. Turn
the salmon into florets and decorate the plates
with slices of hard-boiled egg, a mayonnaise or
dill sauce, salad and other colorful vegetables.

Cool the dinner plates. Put one layer of thinly
sliced smoked salmon. Finish with finely
chopped onion, chopped parsley, a turn from
the pepper mill and a slice of lemon.
Serve with toasted baguette and good butter.
