Make a soup with sliced chicory, garlic, onion and chicken
stock. Season with pepper, salt and a pinch of cayenne
pepper. Leave to simmer for around 20 minutes and then use
the hand mixer.
Whip the cream in half. Cut the dried ham into strips.
In the soup plate: a ladle of soup topped with a dollop of
cream, shredded ham strings and the green of a sliced spring
onion.
