Boil the eggs and cut them in quarters. Peel the
tomatoes, make them empty and cut into
cubes. Peel the gray shrimps. Cut the mango,
cucumber and carrot into sticks of equal
thickness and length. Divide a lemon slice into
four pieces.
Mix mayonnaise and ketchup with a dash of
gin.
In champagne coupes: a bottom of finely
chopped lettuce, a leaf of whiteloaf (Belgian
endives), the sticks of mango, carrot and
cucumber, a quarter of an egg, shredded
spring onion, some tomato cubes, a spoonful
of hand-peeled gray shrimps.
Finish with a slice of lemon and a sprig of
chervil. Serve the sauce into a separate jar.
The "decoration" of a shrimp cocktail has
almost no restrictions for any amateur chef
with inspiration.
Various ingredients can be used in different
combinations. For example, avocado,
mandarin oranges, shoots of red cabbage,
dried cherry tomatoes, unpeeled shrimps for
decoration, sticks of an apple, quail eggs
instead of chicken eggs.
