Cut a piece of unpeeled cucumber into sticks.
Remove the seeds.
Cut slices of smoked salmon into square sheets
of about 3 to 4 centimeters wide. Brush one
side with horseradish cream and season with a
spin from the pepper mill.
Place a cucumber stick, a sprig of dill and a few
chive stems on each slice of salmon and roll up.
Cut narrow rings from a piece of leek. Choose
the yellow-green part. Slide a leek ring over the
salmon roll.
Serve as one of three different appetizers on a
tasting plate.
