Yellow carrot puree: boil or steam the yellow
carrots until tender. Pass them through the
passe-vite and mix with butter. Season with
pepper, salt and cayenne pepper.
Spinach stoemp: make mashed potatoes and
mix it with spinach leaves fried in butter to form
a stoemp.
From September to April, sea bass is at its
best.
